It’s not easy to feel motivated to cook something when you’re the entire dinner party. I admit to having dined on popcorn or cereal more than once just because it just doesn’t feel worth the effort to go full Bobby Flay on a single-portion serving. And downsizing recipes meant for parties of 4-8 never really works (Half an egg? Sure, just bring me half a hen). More often than not, I forget to downsize some of the ingredients and wind up with something monstrous that Guillermo del Toro might make a movie about. And who has the willpower to resist eating every single baked item from a full batch? Put them in the freezer for later, you say? Sure — so I can gnaw on them some more in half an hour? No, chef.
